SPICY BREADED FISH

1# fish
1 ½ cup seasoned breadcrumbs (or croutons finely crushed)
1 teaspoon dry mustard
½ teaspoon salt
¼ teaspoon ground red pepper or red pepper flakes
¼ teaspoon pepper
1 egg
1 tablespoon water
3 tablespoon butter or margarine
preheat oven to 400.
Mix crumbs, mustard, salt, red pepper & pepper.
Whisk egg & water until well blended
Dip fish into egg mixture
Coat with crumb mixture
Put fish in pan
Drizzle with butter

Bake uncovered for about 20 minutes..(less if fish is skinny or more toward 20-25 minutes if thick filets.) When fish flakes easy white inside, it is done.

Use more of the red pepper & mustard, like at least double or triple of the above amounts, cause I like it spicy. I also find that one egg is never enough. For medium to thick filets, I bake at 425 degrees for 25 minutes..(watch the last few minutes, so you don’t burn)

I also pam the bottom of the pan so the fish does not stick & pulls out easy.
I also use a bit of cream or milk w/ the egg, instead of water.
